Crispy Parmesan Roast Potatoes are a quick and irresistible side dish featuring golden, cheesy crusted potatoes roasted to perfection. Ingredients
For the Potatoes
- 1 1/2 pounds small potatoes (1 to 1.5 inch diameter), cut in half
- 2 tablespoons oil, divided
- Salt and pepper, to taste
For the Parmesan Crust
- 1 cup parmigiano reggiano (parmesan), grated
Optional Dipping Sauce (Gochujang Mayo)
- 1/4 cup mayonnaise
- 1 tablespoon gochujang (Korean chili paste) or sriracha
Optional Garnish & Seasoning Variations
- Chopped fresh parsley, for garnish
- Optional spices or seasoning blends (such as cajun, taco, Italian seasoning, chili powder, paprika, oregano, rosemary, thyme, garlic powder, onion powder, etc.)
Instructions
- Prepare Baking Dish: Preheat your oven to 400°F (200°C). Brush 1 tablespoon of oil onto the bottom of a baking dish or large ovenproof skillet. Sprinkle the grated parmesan evenly over the oiled surface.
- Toss the Potatoes: In a bowl, toss the halved potatoes with the remaining 1 tablespoon of oil, salt, and pepper. (If you’re adding extra seasonings or spices, mix those in now.)
- Arrange Potatoes: Press each potato half (cut side down) firmly into the parmesan mixture in the baking dish, making sure each piece is well coated and has contact with the cheese.
- Roast: Place the dish in the preheated oven. Roast for 20–25 minutes, or until the parmesan crust is golden brown and crispy, and the potatoes are tender when pierced with a fork.
- Cool & Serve: Remove from the oven and allow potatoes to cool in the pan for at least 5 minutes. Gently break them apart and transfer to a serving plate.
- Optional: Prepare Dipping Sauce: For a spicy dipping sauce, mix together 1/4 cup mayonnaise and 1 tablespoon gochujang or sriracha.
- Garnish & Enjoy: Sprinkle potatoes with chopped parsley if desired, and serve with the dipping sauce on the side.

- Try other seasoning blends for different flavor profiles—such as Italian herbs, chili powder, or smoky paprika.
- Use parchment paper for easier cleanup if desired.
- Avoid overcrowding the pan to ensure crispy parmesan crust.
