Ingredients

Hot Honey Sauce

  • 1/3 cup (110g) Honey
  • 1 1/2 tsp Hot Sauce (such as Frank’s or Cholula)
  • 3/4 tsp Chilli Flakes

Chicken and Coating

  • 2 x 250g (9oz) Chicken Breasts, sliced horizontally to make 4 pieces
  • 2 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Black Pepper
  • 1/4 tsp Cayenne Pepper
  • 35g (1/4 cup) Plain Flour
  • 2 Eggs, beaten
  • 65g (1 cup) Panko Breadcrumbs
  • Vegetable Oil, 6-8 tbsp (for frying)

Topping

  • 200g (7oz) Feta Cheese, crumbled


Instructions

  1. Prepare Hot Honey Sauce: In a bowl, combine the honey, hot sauce, and chilli flakes and warm in the microwave for about 20 seconds or heat gently on the stove until simmering. Stir well and allow to cool. Adjust spiciness by adding more chilli flakes or hot sauce if desired.
  2. Slice Chicken: Horizontally slice the chicken breasts through the center to make 4 even-sized pieces. Set aside.
  3. Mix Seasonings: In a small bowl or pot, combine paprika, salt, onion powder, garlic powder, dried oregano, cayenne pepper, and black pepper. Divide this seasoning mix to complement the flour and Panko coatings.
  4. Set Up Dredging Station: Arrange three shallow dishes and a large tray: first dish with plain flour mixed with half the seasoning, second with beaten eggs, third with Panko breadcrumbs mixed with remaining seasoning. Thoroughly coat each chicken piece by dredging first in flour, then egg, and finally the breadcrumb mixture, ensuring a complete coating. Place coated pieces on tray.
  5. Pan-Fry Chicken: Heat vegetable oil in a large pan over medium-high heat until hot enough to sizzle a breadcrumb on contact. Fry chicken pieces in batches if needed, cooking about 3-4 minutes per side until golden brown, crispy, and cooked through (juices run clear). Transfer fried chicken to a wire rack set over the tray to drain excess oil.
  6. Add Feta and Grill: Generously cover each piece of fried chicken with crumbled feta cheese. Place under a high grill (broiler) until the feta starts to turn golden brown and becomes soft and slightly crisp, approximately 2-3 minutes.
  7. Serve: Drizzle the prepared hot honey sauce over the chicken as desired. Serve immediately and refrigerate any leftover hot honey for later use.
