Ingredients
Egg and Cheese
- 1 large egg
- ¾ oz (20g) feta cheese
- Cooking oil spray or olive oil spray
- Dried oregano, to taste
- Red pepper flakes, to taste
Tortilla and Toppings
- 1 small tortilla or slice of toasted bread
- ¼ avocado
- 1 teaspoon lemon juice
- Pickled onions, for garnish
- Chili oil, for garnish
Instructions
- Prepare the Pan and Feta: Heat a small frying pan or skillet over medium heat and spray with cooking oil. Crumble the feta cheese evenly in the pan, making sure to cover the outer edge of the pan to create a crispy cheese crust.
- Sauté the Feta and Add Egg: Let the feta cheese sizzle gently for a couple of minutes until it starts melting and forming a golden brown crust. Carefully crack the egg in the center of the pan on top of the feta.
- Season and Cook the Egg: Sprinkle dried oregano and red pepper flakes over the egg. Cook the egg to your preferred doneness, whether that is medium or with a runny yolk, while allowing the feta to crisp.
- Warm the Tortilla and Prepare Avocado: Warm the tortilla on a gas stove, in the oven, or microwave. Smash the avocado and spread it evenly on the warm tortilla. Add a squeeze of fresh lemon juice on top of the avocado for brightness.
- Assemble the Dish: When the egg is cooked and the feta cheese has formed a golden crust, gently slide the egg and crispy feta onto the avocado-covered tortilla using a spatula. Garnish with pickled onions and drizzle chili oil on top before serving.
