Ingredients

For the Chicken

  • 2 large chicken breasts
  • Salt & pepper, to taste
  • Flour, for dredging
  • 2 tablespoons olive oil
  • 2 tablespoons butter

For the Mushroom Sauce

  • 12 ounces mushrooms (cremini or white mushrooms), sliced
  • 1/4 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1 cup heavy cream or whipping cream


Instructions

  1. Prepare the Chicken: Slice each chicken breast in half lengthwise to create four thinner cutlets. Season both sides evenly with salt and pepper, then lightly dredge each piece in flour, shaking off any excess.
  2. Sear the Chicken: Heat 2 tablespoons of olive oil in a skillet over medium-high heat. When hot, add the chicken cutlets and cook for 4-5 minutes on each side until golden brown and cooked through. Remove from the pan and set aside on a plate.
  3. Cook the Mushrooms: In the same skillet, add 2 tablespoons of butter. Once melted, stir in the sliced mushrooms and sprinkle with Italian seasoning. Cook the mushrooms while occasionally stirring until the released moisture evaporates and they get a nice sear. Then remove mushrooms from pan and set aside with the chicken.
  4. Make the Sauce Base: Add the minced garlic, chicken broth, lemon juice, and Dijon mustard to the skillet. Stir well to dissolve the mustard, and allow the mixture to simmer and reduce by half—this should take about 3-4 minutes.
  5. Add Cream and Combine: Pour in the heavy cream and return the cooked chicken and mushrooms to the skillet. Let everything simmer gently for about 5 minutes more until the chicken is fully cooked through and the sauce has thickened to a creamy consistency. Taste and season with salt and pepper as needed.

Notes

  • Use cremini mushrooms for a deeper flavor, or white mushrooms for a milder taste.
  • Make sure not to overcrowd the pan while searing chicken to get a nice golden crust.
  • If sauce thickens too much, add a splash of chicken broth or water to loosen it.
