Ingredients
Chicken Base
- 4 cups chopped cooked chicken (from 1 rotisserie chicken)
Sauce
- 1 can cream of mushroom soup (10.5 oz)
- 1 cup sour cream
Topping
- 1/2 sleeve Ritz crackers
- 1/2 stick butter (melted)
Instructions
- Preheat Oven: Preheat your oven to 350ºF (175ºC) to prepare for baking the casserole.
- Prepare Baking Dish: Spray an 8×8-inch baking dish with non-stick cooking spray to prevent sticking.
- Layer Chicken: Spread the chopped cooked chicken evenly across the bottom of the baking dish to form the base layer.
- Mix and Pour Sauce: In a bowl, combine the cream of mushroom soup and sour cream until smooth, then pour this mixture evenly over the chicken in the dish.
- Add Cracker Topping: Crumble the Ritz crackers evenly over the top of the soup and sour cream layer to create a crunchy topping.
- Drizzle Butter: Melt the butter and drizzle it evenly over the crumbled crackers to add rich flavor and help the topping crisp up.
- Bake: Place the casserole in the preheated oven and bake for 30 minutes until the casserole is hot and the cracker topping is golden and crispy.
Notes
- You can substitute cream of mushroom soup with cream of chicken soup for a different flavor.
- Use fresh or leftover cooked chicken if a rotisserie chicken is not available.
- For a gluten-free version, use gluten-free crackers and soup alternatives.
- Optionally, add vegetables like peas or green beans to the chicken layer for added nutrition.
