Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to get it ready for baking the egg mixture.
- Sauté Vegetables: Heat 1 tablespoon of olive oil in a pan over medium heat. Add diced red bell pepper and yellow onion, sautéing for 5-8 minutes until they begin to soften.
- Add Spinach: Add the spinach to the pan and sauté until it wilts. Then turn off the heat to stop cooking.
- Whisk Eggs: Crack the 12 eggs into a large bowl and whisk them until fully blended.
- Combine Ingredients: To the eggs, add the cottage cheese, sautéed peppers, onions, spinach, garlic powder, salt, hot sauce, and black pepper. Whisk everything together until fully combined.
- Prepare Baking Dish: Spray a 9×13 inch baking pan with non-stick cooking spray to prevent sticking.
- Pour Mixture: Pour the egg mixture evenly into the prepared baking pan.
- Bake: Place the pan in the preheated oven and bake for 40-45 minutes until the egg bake is set and cooked through.
- Cool & Remove Moisture: Remove from oven and let cool for 10-15 minutes to finish setting. Pat the top gently with a paper towel to remove any excess moisture.
- Garnish & Serve: Sprinkle sliced chives on top, slice into 12 pieces, and enjoy your wholesome egg bake!
