Ingredients

For the Chicken Caesar Filling

  • 3 cups chopped romaine lettuce
  • 1 1/2 cups chopped cooked chicken (grilled, fried, or rotisserie)
  • 1/3 cup Caesar dressing
  • 1/3 cup freshly grated Parmesan cheese
  • 1/2 cup homemade croutons
  • Kosher salt and freshly ground black pepper, to taste

For Assembling

  • 4 flour tortillas or wraps (10-inch)

Instructions

  1. Prepare the Filling: In a large bowl, combine the romaine lettuce, chopped chicken, Caesar dressing, Parmesan cheese, and croutons. Use tongs to toss everything together until evenly coated. Season with kosher salt and freshly ground black pepper to taste. Sample and add more dressing if you prefer your wraps creamier. Set the mixture aside while you prepare the tortillas.
  2. Warm the Tortillas: Heat a large skillet over medium heat. Warm each tortilla for about 15 to 30 seconds per side until they are pliable but not crispy. Place the warmed tortillas on a plate and cover with a kitchen towel to keep them soft. Alternatively, you can wrap the tortillas between paper towels and microwave for 15 to 30 seconds.
  3. Assemble the Wraps: Lay each tortilla on a clean surface. Divide the Caesar salad mixture evenly between the tortillas, placing the filling in the center. Fold in the opposite sides of each tortilla, then roll up burrito-style to enclose the filling. If desired, secure each wrap with a toothpick to help keep it closed. Cut in half or serve the wraps whole.
