Description

Ingredients

Orange Slices

  • 2 medium oranges, thinly sliced

Syrup

  • 400 g granulated sugar
  • 750 ml water, divided (250 ml + 500 ml)

  • Caster sugar, for sprinkling


Instructions

  1. Prepare Oranges: Place the thinly sliced orange pieces into a large, wide saucepan. Cover them with 250 ml (1 cup) of water and bring to a boil to soften and start the candying process.
  2. Blanch Orange Slices: Simmer the orange slices for 2 minutes, then drain and discard the water. Wipe the pan clean to prepare for the syrup.
  3. Make Sugar Syrup: Add the remaining 500 ml (2 cups) water to the saucepan along with the granulated sugar. Stir gently with a fork until the sugar dissolves completely.
  4. Simmer Orange in Syrup: Add the orange slices back into the pan with the syrup and bring to a simmer. Maintain a gentle simmer for 40 to 60 minutes, until the pith becomes translucent, which indicates that the slices have absorbed the syrup fully. The exact time varies depending on the thickness of the slices.
  5. Cool and Set: Prepare a baking tray by lining it with parchment or wax paper and place a wire rack on top. Using tongs or a slotted spoon, carefully remove the orange slices from the syrup and place them in a single layer on the wire rack to cool and set for up to 24 hours.
  6. Optional Decoration: Once dry and set, sprinkle the candied orange slices with caster sugar for an extra sweet and sparkly finish if desired.
