Description

Enjoy all the flavors of a classic burger—juicy beef, crisp lettuce, tangy pickles, cheese, and a zesty homemade sauce—served in a bowl over perfectly crispy potato chips. These burger bowls are a quick, fun, and delicious twist for lunch or dinner, coming together in just 30 minutes with fresh ingredients and bold seasonings. Perfect for meal prep and highly customizable for dietary needs.

Ingredients

Spice Mix

  • 1 ½ teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano or mixed herbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Bowls

  • 23 medium potatoes
  • 2 tablespoons olive oil, divided
  • 500 grams lean beef mince
  • Lettuce, shredded
  • Cheese, dairy-free or regular, as desired
  • Pickle slices

Burger Sauce

  • 4 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon mustard (dijon or yellow)
  • 1 teaspoon pickle juice (from the jar of pickles)
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika

Instructions

  1. Prepare the Spice Mix: In a small bowl, combine smoked paprika, garlic powder, onion powder, dried oregano or mixed herbs, salt, and black pepper. Set aside for seasoning both the potatoes and beef.
  2. Prepare the Potatoes: Wash and cut the potatoes into chips. Pat them dry thoroughly with paper towels to ensure they crisp up. Place them in a large mixing bowl, add 1 tablespoon olive oil and half of the prepared spice mix. Toss well until the potatoes are evenly coated.
  3. Cook the Potatoes: Arrange the seasoned potatoes on a baking tray and cook in a preheated oven at 200°C (390°F) for 30–40 minutes, or use an air fryer at the same temperature for about 20 minutes. Cook until the chips are golden and crisp, stirring halfway for even cooking.
  4. Cook the Beef: While the potatoes are cooking, heat the remaining olive oil in a large frying pan over high heat. Add the beef mince, breaking it apart with a wooden spoon. Brown the beef thoroughly, then sprinkle over the remaining half of the spice mix. Continue to cook until the beef is deeply colored and any excess moisture has evaporated.
  5. Mix the Burger Sauce: In a small bowl, stir together the mayonnaise, ketchup, mustard, pickle juice, garlic powder, and smoked paprika. Taste and adjust the seasoning if necessary.
  6. Assemble the Bowls: Divide the crispy potatoes among serving bowls. Fill the remaining space in each bowl with shredded lettuce, then top with the cooked beef mince, cheese, and pickle slices. Drizzle the burger sauce generously over the top of each bowl and serve immediately.

Notes

  • For a low-carb option, substitute potatoes with cauliflower florets or baked sweet potato.
  • Customize toppings with tomatoes, red onion, or jalapenos if desired.
  • For a dairy-free bowl, use dairy-free cheese and mayonnaise.
  • Make the beef in advance and assemble just before eating for easy meal prep.
  • Swap lean beef for ground turkey or chicken for a lighter version.
