  • 4 sturdy slices sourdough bread (do not use soft bread)
  • 2 tablespoons butter
  • ⅓ cup Sauvignon Blanc
  • 8 ounces chilled brie (rind removed, cut into thin slices)
  • 1 medium honeycrisp apple (cut into thin slices)
  • ½ cup whole berry cranberry sauce


Instructions

  1. Butter and Prepare Bread: Butter one side of each of the four slices of sourdough bread thoroughly. On the opposite side of each slice, brush a thin layer of Sauvignon Blanc to infuse flavor and aid browning during cooking.
  2. Heat Skillet and Assemble Sandwiches: Preheat a large skillet over medium-high heat. Place two slices of bread, butter-side-down, onto the skillet. Quickly layer each with thin slices of brie cheese, followed by the sliced honeycrisp apple, and then spread whole berry cranberry sauce on top.
  3. Top and Cover: Place the remaining two slices of bread on top of the fillings, butter-side-up. Immediately cover the skillet with a lid to help the cheese melt evenly and retain heat.
  4. Cook First Side: Reduce the heat to medium. Let the sandwiches cook until the cheese starts to melt, then carefully remove the lid. Use a spatula to check the underside of the bread and when it turns golden brown, it is time to flip.
  5. Cook Second Side: Gently flip the sandwiches over and toast the second side until it is also golden brown and the cheese is fully melted. This typically takes a few more minutes.
  6. Serve Immediately: Remove the sandwiches from the skillet and serve hot. Enjoy immediately with a chilled glass of Sauvignon Blanc for a complementary pairing.
