This easy and crowd-pleasing Boat Dip, also known as Rotel Ranch Dip, brings together creamy cheese, zesty Rotel tomatoes, fire-roasted corn, and green chiles for a bold, addictive appetizer. Perfect for parties and gatherings, it’s simple to prepare ahead and serve chilled with chips.


Ingredients

Creamy Base

  • 8 oz cream cheese, softened
  • 16 oz sour cream
  • 1 oz packet ranch seasoning mix

Mix-Ins

  • 15 oz can fire-roasted corn, drained
  • 10 oz can Rotel (diced tomatoes & green chilies), drained
  • 4 oz can diced green chiles, drained
  • 8 oz shredded cheddar cheese

Instructions

  1. Whip Cream Cheese: Add softened cream cheese to a large mixing bowl. Using a hand mixer, or a whisk or rubber spatula, beat the cream cheese until it is creamy, smooth, and free of lumps.
  2. Combine Ingredients: Add the sour cream, ranch seasoning mix, fire-roasted corn, drained Rotel, diced green chiles, and shredded cheddar cheese to the bowl. Stir everything together until thoroughly combined and evenly mixed.
  3. Cover and Chill: Tightly cover the bowl with plastic wrap or a lid. Refrigerate for at least 2 to 3 hours to allow the flavors to blend and for the dip to set properly.
  4. Serve: Serve the chilled dip with tortilla or pita chips. Enjoy as a flavorful, creamy appetizer perfect for sharing.
