Ingredients
Creamy Base
- 8 oz cream cheese, softened
- 16 oz sour cream
- 1 oz packet ranch seasoning mix
Mix-Ins
- 15 oz can fire-roasted corn, drained
- 10 oz can Rotel (diced tomatoes & green chilies), drained
- 4 oz can diced green chiles, drained
- 8 oz shredded cheddar cheese
Instructions
- Whip Cream Cheese: Add softened cream cheese to a large mixing bowl. Using a hand mixer, or a whisk or rubber spatula, beat the cream cheese until it is creamy, smooth, and free of lumps.
- Combine Ingredients: Add the sour cream, ranch seasoning mix, fire-roasted corn, drained Rotel, diced green chiles, and shredded cheddar cheese to the bowl. Stir everything together until thoroughly combined and evenly mixed.
- Cover and Chill: Tightly cover the bowl with plastic wrap or a lid. Refrigerate for at least 2 to 3 hours to allow the flavors to blend and for the dip to set properly.
- Serve: Serve the chilled dip with tortilla or pita chips. Enjoy as a flavorful, creamy appetizer perfect for sharing.
Notes
- The dip tastes best after a few hours in the fridge; overnight chilling intensifies the flavors even more.
- Feel free to use lower-fat cream cheese or sour cream if you prefer a lighter option.
- For added heat, use spicy Rotel or add chopped jalapeños.
- Store leftovers in an airtight container for up to 3 days in the refrigerator.
