Ingredients

Oat Crust & Topping

  • 1 cup old-fashioned oats
  • 3/4 cup all-purpose flour (or gluten-free flour blend)
  • 1/3 cup light brown sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 6 tablespoons unsalted butter, melted (or coconut oil)
  • 1 teaspoon vanilla extract

Blueberry Filling

  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup granulated sugar
  • 2 teaspoons cornstarch

Instructions

  1. Preheat & Prep Pan: Preheat your oven to 375°F (190°C). Line an 8-inch square baking pan with parchment paper, leaving enough overhang on the sides for easy removal of the bars once baked.
  2. Mix Dry Ingredients: In a large bowl, combine the oats, flour, brown sugar, baking soda, salt, and cinnamon (if using). Stir until evenly mixed.
  3. Add Wet Ingredients: Pour in the melted butter and vanilla extract. Stir until the mixture forms a crumbly texture. It should hold together when pressed between your fingers.
  4. Form the Base: Transfer half of the oat mixture into the prepared pan. Press it down firmly and evenly to create the base layer for the bars.
  5. Prepare Blueberry Filling: In a separate bowl, toss the blueberries with the granulated sugar and cornstarch until the berries are well coated and the mixture looks syrupy.
  6. Layer the Blueberries: Spread the blueberry filling evenly over the oat base in the pan.
  7. Add the Crumble Topping: Sprinkle the remaining oat mixture over the blueberries. Gently press down, just enough to hold things together but still leave a crumbly texture.
  8. Bake: Place the pan in the oven and bake for 35–40 minutes, or until the top is golden brown and the blueberry filling is bubbling.
  9. Cool & Slice: Allow the bars to cool completely in the pan on a wire rack. Once cooled, use the parchment paper overhang to lift them out and cut into squares.

  • For extra texture, add a handful of chopped nuts to the oat mixture.
  • Substitute coconut oil for butter for a dairy-free version.
