Ingredients
1 ¼ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon fine sea salt
1 teaspoon ground cinnamon
½ cup salted butter, melted
¾ cup granulated sugar
¼ cup light brown sugar
½ cup unsweetened applesauce
2 eggs
1 teaspoon vanilla
1 cup carrots, finely grated
1 cup add-ins (crushed pecans, walnuts, raisins, etc.) (optional)

Instructions
- Preheat oven to 350 degrees.
- Line 2 round 6” cake pans with parchment paper and grease the sides.
- Combine flour, salt, baking powder, baking soda, and cinnamon in a small bowl, and set aside.
- In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until the mixture is smooth.
- Add eggs, applesauce, and vanilla and whisk to combine.
- Add the dry ingredient mixture to the wet ingredients and stir until the batter is smooth.
- Stir in grated carrots and mix-ins if desired, ensuring they’re evenly distributed.
- Divide the batter evenly between the two prepared cake pans and spread it in an even layer.
- Bake in the preheated oven for 25-30 minutes, or until a cake tester comes out clean.
- Let cool in the pans for at least 30 minutes, then transfer to a wire rack to cool completely.
- Make the cream cheese frosting as per the linked recipe.
- Frost the cooled cakes, assemble them into layers, and decorate as desired.
- Chill for at least 3 hours or overnight before serving cold or at room temperature.
