Beef Tibs Ingredients
- 1.5 lbs beef, cut into bite-sized pieces
- 1/3 cup niter kibbeh (Ethiopian clarified butter)
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 jalapeno pepper, sliced
- 1 tsp berbere
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp black pepper
- 1/2 tsp salt
Instructions
- Make Awaze Sauce: In a small bowl, combine the berbere, black pepper, cumin, ground ginger, and salt. Add 1/4 cup water and 1 tablespoon olive oil, mixing until it forms a smooth paste. Alternatively, blend the ingredients using a food processor. Set aside the prepared Awaze sauce.
- Prepare Ingredients: Wash the bite-sized beef pieces and drain using a colander. Chop the onions and jalapeno pepper, and mince the garlic cloves.
- Brown the Beef: Heat 3 tablespoons of olive oil in a large skillet over high heat. Add the beef pieces along with 1/2 teaspoon salt, 1/2 teaspoon black pepper, and 1 teaspoon berbere. Stir frequently and cook until the beef is well browned on all sides. Remove the browned beef from the skillet and set aside.
- Sauté Aromatics: In the same skillet, melt 1/3 cup niter kibbeh (Ethiopian clarified butter) over medium heat. Add the chopped onions and minced garlic and sauté for a few minutes until softened and fragrant. Then add the sliced jalapeno pepper and cook briefly.
- Combine and Simmer: Add the prepared Awaze sauce to the skillet, stirring well to combine with the aromatics. Reduce heat to low and simmer the sauce for about 5 minutes to let the flavors meld. Return the browned beef pieces to the skillet and stir to coat with the sauce.
- Finish Cooking: Add 1 tablespoon lemon juice to the skillet and continue to simmer on medium heat for several minutes until the beef is fully cooked and the sauce has thickened slightly.
- Serve: Garnish with fresh cilantro leaves if desired. Serve the Awaze Tibs hot, typically accompanied by traditional Ethiopian injera or rice.

- Niter kibbeh, Ethiopian clarified butter, can be substituted with regular clarified butter or ghee if unavailable.
- Adjust the amount of berbere spice according to your preferred spice level.
