Ingredients

Bread and Avocado

  • 1 slice sourdough bread (whole grain or gluten-free, toasted, e.g., Dave’s Killer Bread good seed, thin sliced)
  • 1 ounce mashed avocado (about 1/4 small Haas avocado)
  • Olive oil spray

Egg Options

  • 1 large egg
  • Kosher salt, to taste
  • Black pepper, to taste
  • Hot sauce or red pepper flakes (optional)


Instructions

  1. Mash the Avocado: In a small bowl, mash the avocado with a fork until smooth. Season with kosher salt and black pepper to taste, then set aside.
  2. Sunny Side Up Egg: Heat a small nonstick skillet over low heat. When hot, spray lightly with olive oil. Gently crack the egg into the skillet. Cover and cook until the egg white is set and the yolk reaches your desired doneness.
  3. Hard Boiled Egg: Prepare hard boiled eggs by your preferred method—on the stovetop, in an air fryer, or using an Instant Pot. Once cooked, peel and set aside.
  4. Scrambled Egg: Beat the egg in a small bowl with a fork, seasoning with a pinch of salt. Heat a small nonstick skillet over low heat and spray with olive oil. Pour in the egg mixture. When the edges begin to set, gently fold the eggs until fully cooked, about 2-3 minutes.
  5. Poached Egg: Bring a small pot of water to a boil. Add 1 teaspoon of white vinegar and stir to create a vortex. Crack the egg into a small bowl, then gently slide it into the center of the swirling water. Reduce heat to low and cook for 3-4 minutes, or until the yolk is cooked to your liking. Remove with a slotted spoon and drain on paper towels.
  6. Assemble the Toast: Spread the mashed avocado evenly over the toasted slice of bread. Top with your cooked egg of choice. Sprinkle with additional kosher salt and black pepper. Add hot sauce or red pepper flakes if desired for extra flavor.
