Description
A quick and flavorful breakfast or snack recipe featuring creamy mashed avocado and spicy, savory chorizo served on toasted multigrain bread, enhanced with fresh lime juice and cilantro for a zesty finish.
Ingredients
Chorizo and Bread
- 8 oz. chorizo
- 4 slices multigrain bread
Toppings and Seasonings
- 2 tablespoons extra-virgin olive oil
- 1 clove garlic (sliced in half crosswise)
- 1 avocado
- 4 lime wedges
- 2 tablespoons chopped fresh cilantro
- Kosher salt (to taste)
- Black pepper (to taste)
Optional Garnishes
- Extra cilantro
- Extra lime wedges
Instructions
- Cook the chorizo: Heat a skillet over medium heat and cook the chorizo until it is browned and fully cooked through, breaking it up as it cooks for even browning.
- Toast the bread: While the chorizo is cooking, toast the multigrain bread slices in a toaster until golden and crisp.
- Prepare the toasted bread: Immediately after the bread is toasted and still warm, drizzle each slice evenly with the extra-virgin olive oil, then rub the cut side of the halved garlic clove onto each slice to impart a subtle garlic flavor.
- Mash the avocado: Using a fork, mash one-quarter of the avocado on top of each slice of toasted bread, creating a creamy layer.
- Add lime, seasoning, and cilantro: Squeeze fresh lime juice over the avocado, then season with kosher salt and freshly ground black pepper to taste. Sprinkle the chopped fresh cilantro evenly over each toast.
- Top with chorizo: Evenly distribute the cooked chorizo over each avocado-topped toast, allowing the warm flavors to meld together.
- Serve and garnish: Serve the avocado and chorizo toasts with extra cilantro and lime wedges on the side for additional garnish and flavor enhancement if desired.
Notes
- Use ripe avocados for the best creamy texture and flavor.
- Adjust the amount of chorizo according to your preference for spice and meatiness.
- For a vegetarian version, substitute the chorizo with sautéed mushrooms or seasoned plant-based sausage.
- Adding a sprinkle of red pepper flakes can enhance the heat for spice lovers.
- This recipe is best served immediately to enjoy the contrast of warm toast and cool avocado.
