Ingredients
For the Apple Filling

Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper and set aside.
- Make Apple Filling: In a medium bowl, combine the diced apples, brown sugar, cinnamon, and cornstarch. Mix thoroughly until the apples are well coated, then set aside. This should yield about 3½ cups of filling.
- Assemble Egg Rolls: On a clean work surface, lay out the egg roll wrappers. Working one at a time, spread about 2 teaspoons of room-temperature cream cheese onto the center of each wrapper. Top the cream cheese with about 2 tablespoons of the apple mixture.
- Roll the Egg Rolls: Dip your finger in water and lightly wet the edges of the egg roll wrapper. Fold up the bottom corner over the apple and cream cheese filling, rolling once to secure the mixture. Fold in the right and left corners toward the center, pressing gently to seal and resembling an open envelope. Add more water to the edges as needed. Continue rolling until the filling is completely enclosed; press the edge to seal.
- Bake: Arrange the rolled egg rolls seam-side down on the prepared baking sheet. Brush or spray each egg roll lightly with cooking oil. Bake for 15–17 minutes, flipping the egg rolls halfway through, until golden brown and crisp. Meanwhile, combine the granulated sugar and ground cinnamon for the topping in a shallow dish.
- Coat with Cinnamon Sugar: Once baked, immediately roll each hot egg roll in the cinnamon-sugar mixture, making sure all sides are evenly coated.
