Description

This air fryer accordion potatoes recipe offers a crispy, flavorful twist on classic potatoes. Thinly sliced yet held together by wooden skewers, these potatoes are brushed with garlic-infused oil and air fried until golden and tender. Perfect as a tasty side dish or a unique snack, they come together quickly with minimal prep and produce a deliciously crisp exterior.

Ingredients

Potatoes

  • 3-4 medium potatoes

Seasoning and Oil

  • 3 tbsp oil (divided: 2 tbsp for seasoning, 1 tbsp for brushing)
  • 2-3 cloves garlic, finely chopped
  • 1 tsp salt (or as per taste)

Instructions

  1. Prepare the seasoning oil: Combine the finely chopped garlic, salt, and 2 tablespoons of oil in a small bowl and set aside to infuse the flavors.
  2. Clean and peel the potatoes: Wash the potatoes thoroughly to remove any dirt and peel them to prepare for slicing.
  3. Create flat surfaces on the potatoes: Cut both ends off each potato to create flat surfaces, which will make them easier to slice evenly.
  4. Make accordion cuts: Place each potato between two wooden spatulas or spoons and carefully slice diagonally without cutting all the way through, using the spatulas as guides to stop the knife from slicing fully through the potato.
  5. Insert wooden skewers: Push a wooden skewer lengthwise through each potato to hold the slices together during cooking.
  6. Preheat the air fryer: Set the air fryer to 200°C (390°F) and preheat for about 10 minutes for even cooking.
  7. Brush with oil: Lightly brush the potatoes with the reserved 1 tablespoon of oil to promote crispiness.
  8. First air fry session: Air fry the potatoes at 200°C (390°F) for 8 minutes to start cooking them.
  9. Season and continue air frying: Generously coat the potatoes with the garlic-salt-oil mixture and continue air frying for an additional 12-14 minutes at the same temperature, until the potatoes are golden brown and cooked through. Adjust time for larger potatoes as needed.
  10. Serve: Remove from the air fryer and serve hot or warm for best taste and texture.

Notes

  • Use medium-sized potatoes for even cooking; larger potatoes may require more cooking time.
  • Wooden skewers help keep the potato slices intact while air frying.
  • Adjust salt to taste and try adding herbs like rosemary or paprika for additional flavor.
  • Make sure not to cut all the way through the potatoes to keep the accordion shape.
  • Serve immediately for maximum crispiness as the potatoes tend to soften upon cooling.
