Perfect as a main dish served over rice or as a delightful appetizer, it’s an easy-to-make dish that balances bold flavors with minimal preparation time.
Ingredients
Shrimp Marinade
- 450g / 1lb shrimp, peeled and deveined
- 1 tbsp light soy sauce
- 1 tbsp cornstarch
Sauce & Cooking
- 2 tbsp vegetable oil
- 3-4 cloves garlic, minced
- 1 tbsp ginger paste or grated ginger
- 4 tbsp honey
- 1/4 tsp chili flakes (optional)
Garnish
- 2 green onions, sliced
Instructions
- Marinate the Shrimp: In a medium bowl, combine the light soy sauce and cornstarch. Add the peeled and deveined shrimp to the mixture and toss well to coat. Set this aside to allow the shrimp to absorb the marinade, a technique known as ‘velveting’ which helps keep the shrimp tender during cooking.
- Cook Garlic and Ginger: Heat the vegetable oil in a non-stick frying pan over medium heat. Add the minced garlic and ginger paste and sauté for no longer than 30 seconds until fragrant, ensuring they don’t burn to maintain a fresh and aromatic base for the dish.
- Cook the Shrimp: Add the marinated shrimp to the pan. Cook the shrimp for 1-2 minutes on each side, adjusting time based on shrimp size, until they turn pink and are just cooked through.
- Add Honey and Chili Flakes: Pour the honey over the shrimp along with chili flakes if using. Toss everything quickly to ensure the shrimp are evenly coated in the sweet and slightly spicy sauce. Remove the pan from heat immediately to preserve texture and flavor.
- Garnish and Serve: Sprinkle the sliced green onions over the shrimp for a fresh, crisp garnish. Serve the honey garlic shrimp hot, ideally over steamed rice or as a tasty starter to your meal.
Notes
- Velveting shrimp with soy sauce and cornstarch helps protect the shrimp from overcooking and keeps them tender and juicy.
- Adjust chili flakes according to your preferred spice level or omit for a milder dish.
- Use fresh garlic and ginger for the best flavor; avoid pre-minced garlic to prevent bitterness.
- This dish pairs beautifully with steamed jasmine or basmati rice, but can also be served with noodles or a fresh salad.
- If you prefer a thicker sauce, you can add a slurry of cornstarch and water towards the end and cook for an additional minute to thicken.
